Paprika is planted and produced in various places including Argentina, Mexico, Hungary, Serbia, Spain, the Netherlands, China, and some regions of the United State. Now more than 70% percent of paprika are planted in China which are used to extract paprika oleoresin and export as a spice and food ingredient.

In 2020, 36 million tonnes of green chilies and peppers (counted as any Capsicum or Pimenta fruits) were produced worldwide, with China producing 46% of the total.

Paprika is used as an ingredient in numerous dishes throughout the world. It is principally used to season and color rice, stews, and soups, such as goulash, and in the preparation of sausages such as Spanish chorizo, mixed with meats and other spices. In the United States, paprika is frequently sprinkled raw on foods as a garnish, but the flavor contained within the oleoresin is more effectively brought out by heating it in oil.
